From someone who hated cookies… to discovering the best flavors!
In the past, Koi was someone who never liked cookies.
Not at all. Whenever I thought of cookies, I imagined only dry, crispy, hard snacks with no flavor whatsoever — except for sweetness.
Until one day… I tried cookies from a bakery in Verona, Italy.
And wow! It completely changed my mind.
The cookies were slightly crunchy on the outside, with a soft and chewy interior.
They had a subtle buttery aroma, but were a bit too sweet (maybe because I don’t like things that are overly sweet).
That was the beginning of my journey toward creating my ideal cookie recipe.

Soon after, I began studying and experimenting with cookie recipes seriously.
At first, it wasn’t as easy as I thought.
We (Koi and the admin) tried the recipe many times, but the results were still disappointing.
- Sometimes they were dry and hard as rocks.
- Sometimes they spread flat and lost their shape.
- Sometimes they were soft and underbaked.
- Sometimes they came out pale white, like they hadn’t been baked at all.
- And sometimes the tops were burnt — almost turning into charcoal!
That day, I thought, “Enough! I don’t have to try anymore.”
They just weren’t what I wanted.
So, I tried other recipes instead.
But with determination, I didn’t give up.
Finally, I discovered the secret to making cookies —
the best cookies I’ve ever tasted!
They were exactly the cookies I had dreamed of for so long.
After countless experiments, I realized there are secrets behind the shape, texture, and taste of cookies that many people don’t know — and often overlook.
